I’ve blogged in the past about how much I love cookbooks. I sit down each week and grab a book off my shelves and create my menu and grocery list around the meals in that cookbook. This week’s meals have come from “Delish Just Four Ingredients Fast”. We’ve enjoyed: Beef and Black Bean Stir-Fry, Thai Chicken Burgers and Mini Berry Pies. Next week we’ll be enjoying the Pesto Chicken with Grilled Zucchini.
Delish JUST FOUR ingredients fast! is hardcover with a spiral binding – which means the pages lay flat and I don’t need to put a heavy object on one of the pages to keep the pages from flipping while I’m following along. It has more than 150 recipes that are broken down into categories like: brunch, lunch on the run, weeknight standbys, from the veggie patch, dinner with friends, hot off the grill, coffee break, just for kids and a glossary and index. The book is full of colored photos and it gives the nutritional breakdown of each recipe.
Beef and Black Bean Stir Fry (I served it with basmati rice)
1 1/2 pounds beef sirloin strips
1 large red pepper, sliced thinly (I used two because my family loves peppers)
1 bunch baby choy sum (chinese cabbage), chopped coarsely (I couldn’t find this in my grocery store so I used regular bok choy)
1/2 cup black bean garlic sauce
1. Heat oiled wok; stir-fry beef, in batches, until just browned.
2. Add pepper to wok; stir-fry 1 minute. Return beef to wok with remianing ingredients and 2 tablespoons water; stir-fry until choy sum wilts.
