I love meatloaf. I mean really love meatloaf. So does my daughter. If you asked her what her favorite meat was, she’d say “loaf”. I think I may have to agree with her – although Bacon might really be my #1 meat. Oh my gosh, I just thought of bacon and meatloaf. That might have to be my next meatloaf I make. Yum!
These Mini-Meatloaves are adapted from the EatingWell 500-Calorie Dinners Cookbook.
This meatloaf is made with ground turkey, ground beef and ground pork. Plus we’ve substituted breadcrumbs with quick cook oatmeal.
Weight Watchers PointsPlus = 5 per serving. Makes 8 servings.
8 oz lean ground pork
8 oz lean ground beef (90% or leaner)
8 oz ground turkey breast (93%)
1 egg beaten
1 T dried parsley or 1/4 C fresh chopped parsley
4 T ketchup (2 T for meat mixture & 2 T for topping)
1/4 C quick cooking oats
3 T low-fat milk
1 onion chopped
1 clove garlic, minced
1/2 tsp salt
1/8 tsp ground pepper
1 1/2 tsp Worcestershire sauce
1. Preheat oven to 375 ° F. Spray 8 muffin cups with non-stick cooking spray.
2. Mix pork, beef, turkey, egg, parsley, ketchup, oats, milk, onion, garlic, salt and pepper in a large bowl.
3. Form a ball with the meat mixture and place in the muffin cups. Combine the remaining ketcup and worcestershire sauce in a small bowl. Spoon evenly over the meatloaves.
4. Bake for 30 minutes. Make sure you place your tins on a cookie sheet to catch any spills.
I served the Mini Meatloaves with Schwan’s Roasted Baby Baker Potatoes. I love these. They are so quick, easy and delicious. I normally microwave them but since baking them is the same amount of time as the meatloaves (30 minutes), I threw them on a baking sheet and put them in the oven with the meatloaf. When they were done, I pulled them from the oven and sprayed them with olive oil cooking spray and put fresh ground spicy garlic on it (it’s a spice that comes in a spice grinder).
