10 or so years ago we raised our own chickens for eggs. It wasn’t until I started the process of raising some of our own meat and eggs that I realized what was going into the meat I was normally buying at the store. The look on my chickens eyes when I would open up their gate in the morning so they could roam around the yard and scrounge for their food all day (in addition to the feed we provided), was priceless. I loved when I would serve my family a melon and we’d give the rind to the chickens to eat. They would all come running over to the rind to get a taste.
Unfortunately my husband was deployed to Iraq and I was having a hard time keeping up with the animals and poultry so I found them all new homes. We never did replace them and I really miss seeing my little “friends” come running up to my car when I’d pull into the yard.

To try out the eggs, I made my family our favorite breakfast meal – Breakfast Scramble.
In a fry pan, add in frozen (or fresh) onions and bell peppers, add in hash brown potatoes (I like the square kind) and turkey sausage crumble. When it’s warmed throughly, make a “hole” in the middle and add in eggs, already scrambled in another bowl. Cook until the eggs are done. At this point, I add in some chili powder and Laughing Cow Cheese wedges in the Chipotle flavor. Yum!
It’s a really quick and delicious meal in the morning. I love that the eggs add protein to help everyone stay full until Lunch.
