I made the most flavorful and delicious steak a couple of nights ago. I couldn’t wait to share the recipe with you. I served it with Smashed Red Potatoes and Roasted Asparagus.
Sirloin Steaks with Caramelized Onions and Blue Cheese
2 T canola oil, divided
2 large vidalia onions, sliced
1 T brown sugar
1/2 cup reduced-sodium beef broth
1 T balsamic vinegar
1/2 tsp salt, divided
1/4 tsp pepper
1 lb sirloin steak – trimmed and cut into 4 steaks
1/4 cup blue cheese (or you can use Gorgonzola)
1. Heat 1 T oil in large skillet over medium heat. Add onions and brown sugar and cook until the onions are very tender and golden brown – stir often. About 15 minutes. Add broth, vinegar and 1/4 tsp salt and cook until all the liquid has been evaporated – about 3-4 minutes. Transfer the onions to a bowl and cover to keep more. Clean out the pan and return to the stove.
2. Sprinkle the remaining salt and pepper onto both sides of the steak. Heat the remaining 1 T of oil in the pan over medium-high heat. Add the steaks and brown – 3-5 minutes and turn over. Top with the cheese. Reduce the heat to medium-low, cover and cook until the cheese is melted and the steaks are cooked to your desired doneness (3-5 minutes for medium-rare). Serve with the caramelized onions.
To make the Smashed Red Potatoes, Scrub 2 lbs of red potatoes, boil until cooked. Drain. Add 1/2 cup nonfat Buttermilk and mash with a potato masher.
To roast the asparagus, clean the asparagus and “snap” them to trim. Place on a baking sheet and spritz with olive oil (I have one of those spray bottles where I add in olive oil and pump the top to add pressure so it’ll spray). Sprinkle with salt and pepper and bake in a preheated 450° oven for 15 minutes.
