Stir-Fry Beef and Broccoli
- 1 1/2 lb beef flank steak, cut into thin slices
- 2 T soy sauce
- 3 garlic cloves, minced
- 1 T grated gingerroot
- 1/3 C hoisin sauce
- 1/3 C water
- 1 T cornstarch
- 1/2 tsp crushed red pepper flakes
- 2 T peanut, sesame or vegetable oil
- 2 C small broccoli florets
In a medium bowl mix the soy sauce, garlic cloves and gingerroot. Set aside. In a small bowl, mix the hoisin sauce, water and cornstarch. Set aside.
Heat 1 T of oil in either a wok or large skillet, over high heat. Add beef mixture and break up the clumps. Cook for 1-2 minutes until the beef is brown. If using fresh broccoli, remove the beef from the pan and add remaining 1 T of oil to pan. Add broccoli and saute until cooked. Add 2 T water, if needed. Return beef back to the pan and pour in the hoisin sauce mixture and stir until well blended. (if using frozen broccoli steamed in the microwave, like I used in my dish – add the broccoli now)
Serve with your choice of rice. I usually use brown rice but today we used Rice-a-Roni Fried Rice.
